Let's go Trick or Treating EARLY!!

 
 
We went Trick or Treating with the preschool this morning for an early start on Halloween. It was a cold morning thou so the costume we picked out wasn't going to work. He originally picked out Mario but it was so cold and Mario was so thin. So I thought we live in the south so how about we go as a hunter. So we dressed in our camo and was all warm and snugly!! Maybe on the real Trick or Treat we will go as planned!!
 

 This is Caden's last year of preschool! So sad!

 We went around our town's square to all the businesses and boy do they give out the candy! I was even a little excited!!


He was great and said "Thank you" to all the candy givers!
 But as always he got a little tired so daddy got "carry me" duty. What a great daddy Matt is.
Off to go eat some "CANDY"

Banana "NO NUTS" Bread

Nothing says Fall than smelling some fresh baked Banana Nut Bread. This is my first loaf this fall. But one thing you should know about me is I hate nuts in food! I love them by themselves but don't dare put them in anything. It makes me want to gag! So I make Banana "No Nuts" Bread.
 Banana "NO NUTS" Bread
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp cinnamon
1/8 tsp nutmeg
2 eggs
1 1/2 cup mashed bananas (5 medium)
1 cup sugar
1/2 cup melted butter
1/4 tsp salt
 Grease and flour you loaf pan and preheat your oven to 350
 Mix together your dry ingredients which consist of flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Make a well in the center of the dry mixture.
 Mix together your wet ingredients. Eggs, bananas, sugar and butter.
 Pour your wet ingredients into the well of the dry ingredients. Stir until just moisten and there will still be lumps and that is ok.
 Pour into your loaf pan and bake for 60 minutes.
Then enjoy a warm piece of banana "no nuts" bread!! YumYum!!

Sausage and Veggies

This is a meal we never have left overs with. My family LOVES it. Even my boys! I jumped on the Pinterest bandwagon a few months ago and have since became addicted to getting recipes. This is the first pinterest recipe I tried and it is now a favorite. Super easy and hardly any cleanup! (Which is another reason it's a favorite!!!)
 
 1 package of turkey sausage
1 bellpepper
1 onion
4-5 red potatoes
1 teaspoon of cajun seasoning
3 tablespoons of olive oil
 Chop all you veggies and sausage and put in a large bowl and put your seasoning and oil on and then stir until it's all coated! By the way I like to leave the peelings on my potatoes!
 I am addicted to my pampered chef stoneware. I use a piece of it daily for meals! This is the barpan but any sheet cake pan will work. Preheat oven to 425 and let it cook for about 30-45 minutes or until your potatoes are fork tender.
 TaDa!! A one dish meal!! And it was delish!!

Pumpkin Patch 2012

 
We went with Caden's Preschool to the pumpkin patch. The boys had a blast and it was alot of fun. Always makes me excited about the upcoming holidays when we go to the pumpkin patch.

 The slide was super popular!





They each pick out a super special pumpkin. Caden looked all over for a "square pumpkin" and couldn't find one so he had to settle for one with a almost flat side!! LOL
 
The week has been a very busy week for us. Monday started off with a trip to the allergy doctor for Caden. Allergy test and flu shot in one trip makes for a not so happy boy! Still allergic to fish, shellfish and codfish but now we got some inhalants to that list too. Trees, grass, weeds and mold. WONDERFUL!! When we came home he didn't want to go outside because he is allergic to trees so I had to explain to him it's not like his fish allergy!!
 
Tuesday I had to take Case back to the doctor because he was still throwing up. They did bloodwork and part of it came back showing he had a bacterial intestinal infection. So he has to be on antibiotics for 10 days to clear that up. The allergy panel won't be back for a few days but hopefully we will find out what food he is allergic to so we can get him healthy!!
 
Last night around midnight Matt woke me up and told me his dad had suffered from a heart attack and they were taking him to Little Rock. So he had to leave out to go be with his family while I stayed home with our boys. His dad had to have 2 stints put in and had 100% blockage in one artery. Poor guy!! So our week has been very stressful/exciting at times!
 
Hopefully everything will work out for the best because this momma is getting tired!!

My Family's Favorite Lasagna

 This lasagna recipe is the bomb. I have tried alot of recipes and they seem to always turn out runny. You know what I am talking about.....You cut into it and all the yummy middle comes runny out. This one isn't runny and it's super yummy!
 You will need:
1 pound of 80/20 hamburger
2 jars of your favorite spaghetti sauce
lasagna noodles
1 onion
Mozarella cheese
Cottage cheese (small curd)
Cheddar cheese
garlic
salt
pepper
Brown your hamburger meat with onions and garlic until done and then add spaghetti sauce. Pour half of that mixture in the bottom of your pan. I don't have a lasagna pan so I use a 9x13 pan. Then you put mozarella and cottage cheese on top of that and add noodles and hamburger mixture, cheese and so forth. I do three layers and then top with cheddar cheese. Oh and I don't precook my noodles. This means one less step!! YAY!!

 Then bake at 375 for 1 hour and 15 minutes!
See no runny insides!!
I always serve mine with green beans and garlic biscuits!!
