Valentine's Day 2013

Valentine's Day! The day of LOVE! We partied all day long. Caden's party started at 10 and we left there and went to grab some lunch and went to Case's party at 12. I came home and did a few chores and went back into town to Case's parent teacher conference! (Which went great. He such a great kid so who could complain about him!) Then I came home and made home spaghetti and meatballs, homemade icecream and brownies!! YumYum!! I was going to do a post on how I cook spaghetti and meatballs but I was a little rushed. I was so glad when bedtime came because I was seriously wiped out from the day! Matt and I never do anything special for Valentine's Day. I look at it as we have the rest of our lives to spend Valentine's alone. So we enjoyed it with our kiddies and my parents!! (I wish I had some of those brownies with icecream!! LOL)

Roasted Asparagus

I have had asparagus one time in my life and I remembered I gagged on it. It was the most disgusting vegetable ever!
But.....the other day we were going thru the produce section of the store and there those little nasty things were, all bundled up waiting to be bought. I had Caden with me and he spots them. Mmm momma I love those. I explained to him that they were nasty but he insisted I buy them for him. So I did!
I then come home and unload them and just look at them in disgust and thought "what the heck am I gonna do with these?" So I go to my trusty Pinterest and find how to basic cook asparagus. It said to sprinkle with olive oil,salt and pepper and roast at 425. So I did.
Guess what? They aren't at all as nasty as I remember. They were actually delish. My kids ate them like no other. So there goes to show you that sometimes something deserves a second chance. Go buy you some asparagus and try it.

Mad Hungry Alfredo


It's taken me awhile but I finally tried a new recipe tonight! My New Year's Resolution hasn't went so well seeing that we had spaghetti this week!! Haha. Anyways, last night I couldn't sleep so I was watching some cooking shows that I had recorded. Mad Hungry is one of my favs and she cooked chicken fettuccine alfredo. It looked delightful and I thought it looked pretty easy. I went exactly by the recipe except I added broccoli. My boys love broccoli so I figured I would throw in a little goodness. It was ready in about 20 minutes and took very few ingredients. And the number 1 about this meal is that my family LOVED it! Sucked it up and Case even asked for me to keep leftovers for tomorrow! WINNER!!!

1 pound of boneless skinless chicken breast. (cut into bite size pieces)
12 ounces of fettuccine
2 cups of heavy cream
4 garlic cloves
Head of broccoli
1 cup of parmesan cheese

Brown chicken in a little bit of olive oil. While chicken is cooking heat heavy cream and garlic to a simmer and then turn off. Cook fettuccine and broccoli until done. Then mix all together and add parmesan cheese. SERVE it up. This is very rich and a little dab goes a long way!
