Sausage and Veggies

This is a meal we never have left overs with. My family LOVES it. Even my boys! I jumped on the Pinterest bandwagon a few months ago and have since became addicted to getting recipes. This is the first pinterest recipe I tried and it is now a favorite. Super easy and hardly any cleanup! (Which is another reason it's a favorite!!!)
 
 1 package of turkey sausage
1 bellpepper
1 onion
4-5 red potatoes
1 teaspoon of cajun seasoning
3 tablespoons of olive oil
 Chop all you veggies and sausage and put in a large bowl and put your seasoning and oil on and then stir until it's all coated! By the way I like to leave the peelings on my potatoes!
 I am addicted to my pampered chef stoneware. I use a piece of it daily for meals! This is the barpan but any sheet cake pan will work. Preheat oven to 425 and let it cook for about 30-45 minutes or until your potatoes are fork tender.
 TaDa!! A one dish meal!! And it was delish!!

Pumpkin Patch 2012

 
We went with Caden's Preschool to the pumpkin patch. The boys had a blast and it was alot of fun. Always makes me excited about the upcoming holidays when we go to the pumpkin patch.

 The slide was super popular!





They each pick out a super special pumpkin. Caden looked all over for a "square pumpkin" and couldn't find one so he had to settle for one with a almost flat side!! LOL
 
The week has been a very busy week for us. Monday started off with a trip to the allergy doctor for Caden. Allergy test and flu shot in one trip makes for a not so happy boy! Still allergic to fish, shellfish and codfish but now we got some inhalants to that list too. Trees, grass, weeds and mold. WONDERFUL!! When we came home he didn't want to go outside because he is allergic to trees so I had to explain to him it's not like his fish allergy!!
 
Tuesday I had to take Case back to the doctor because he was still throwing up. They did bloodwork and part of it came back showing he had a bacterial intestinal infection. So he has to be on antibiotics for 10 days to clear that up. The allergy panel won't be back for a few days but hopefully we will find out what food he is allergic to so we can get him healthy!!
 
Last night around midnight Matt woke me up and told me his dad had suffered from a heart attack and they were taking him to Little Rock. So he had to leave out to go be with his family while I stayed home with our boys. His dad had to have 2 stints put in and had 100% blockage in one artery. Poor guy!! So our week has been very stressful/exciting at times!
 
Hopefully everything will work out for the best because this momma is getting tired!!

My Family's Favorite Lasagna

 This lasagna recipe is the bomb. I have tried alot of recipes and they seem to always turn out runny. You know what I am talking about.....You cut into it and all the yummy middle comes runny out. This one isn't runny and it's super yummy!
 You will need:
1 pound of 80/20 hamburger
2 jars of your favorite spaghetti sauce
lasagna noodles
1 onion
Mozarella cheese
Cottage cheese (small curd)
Cheddar cheese
garlic
salt
pepper
Brown your hamburger meat with onions and garlic until done and then add spaghetti sauce. Pour half of that mixture in the bottom of your pan. I don't have a lasagna pan so I use a 9x13 pan. Then you put mozarella and cottage cheese on top of that and add noodles and hamburger mixture, cheese and so forth. I do three layers and then top with cheddar cheese. Oh and I don't precook my noodles. This means one less step!! YAY!!

 Then bake at 375 for 1 hour and 15 minutes!
See no runny insides!!
I always serve mine with green beans and garlic biscuits!!

"Feel Better" Chicken Noodle Soup

For the past few weeks one of us have been sick. Upper respiratory infections, strep throat and now stomach virus. And nothing makes you feel better than some homemade chicken noodle soup. So tonight is exactly what I made!!
"Feel Better" Chicken Noodle Soup
 
 Take 3-5 boneless, skinless chicken breast
1 onion
3 stalks of celery
4-6 carrots
2 bay leaves
Seasoning salt and pepper
4-6 cups of chicken stock
 Add it to a big stock pot and bring to a simmer and simmer for 1 hours or until chicken is done and carrots are tender. Then remove chicken and bring to a boil and add egg noodles and cook until done and add chicken back in and SURPRISE......

And yes it made me feel lots better!!

Home!

Well it's been awhile but Superman is home! I never realized how on the edge the past few months I had been about this. Because now that he is home and I can relax and actually sleep without secretly listening for the phone in the middle of the night is like AHHHH!!! He started his meds this past week and is doing farely well on them. Occasionally nausea will hit him but over all he is improving! Thank you Jesus! I am so glad to have him back home even tho due to us being sicky I have only stopped and visited once! But we are finely getting better so there should be plenty more visits to make.
Mom secretly called me tonight and said that Dad would love to have some of my porkchop casserole. So if that is what Superman wants then that is exactly what he will get PLUS a pan of brownies for being such a trooper! That old man means alot to me and even tho I have a TOUGH time showing it I think he knows it too!! So Friday I am gonna surprise him with his meal and I hope he is able to eat it!
Some more has happen......
CADEN TURNED 5! So this totally makes knots in my stomach and makes tear well in my eyes. I just told a friend maybe 10 minutes ago I don't know what I am going to do when I don't have kids to dote on night and day. They have been my life for so long and my life revolves around them. My anxiety grows when I think about it so I tried to just live for the moment. But yes, my baby turned 5 and in a few more months my lovely first born will turn 8. Hangon a moment................................................................................................I had to run and give them each a hug and kiss! Awe my boys.....I never realized you could love little people so much but I DO!! Sniff Sniff.
Case gave me a big hug the other day and told me "Mom, I will love you forever. You believe me?" My response was "Buddy I will love you forever and ever. I do believe you and will always believe in you!" His big brown eyes melts my heart. And his sweet little voice which will one day turn deep and raspy.
You live your life in such a rush. Rush to start dating. Rush to drive a car. Rush to be 18. Rush to be 21. Rush to get out on your own. Rush to get married. Rush to have babies. Then you have babies and you no longer have to rush because time just seems to fly by and no matter how much you try to slow it down it won't! I would give anything for my boys to stay boys forever.
This wasn't suppose to be such a mushy blog but it came to me last minute. I love my daddy and I love my boys!!
These are the boys that have filled my heart with so much love!!!

The Time has Come

It's here. The days coming up are going to be filled with the ups and downs of emotions. Tears, laughs, worries, anxiety and with me it will be over indulgences in chocolate because I am an emotional eater! LOL
But for my poor little daddy it is going to be the scariest and painfulness time for him. My little Superman. He gets checked in at 830 in the morning to start a day of prepping him for one of the biggest and longest surgeries. He will be poked and squeezed on all day only to follow with a sleepless night of nurses in and out and the fear of being cut open. Thursday morning the doctors said the surgery will start at 730. Surgery should last anywhere from 8-14hours. This is if the surgery goes without any bumps. He will then be sent to ICU for a few days to make sure he is stable from surgery.
I don't like to see my sweet daddy sick and so I hope and pray that these doctors fix him and that God will perform a miracle on him that the cancer hasn't spread.

Life

I don't even know how to start a post like this. Mainly because it involves my Superman. My superman would be my daddy. My daddy is my Superman because he has been there for me thru everything. He is such a compassionate man. Always loved me no matter what. Even when I was in the wrong! He is also  a wonderful Papaw to my awesome 2 little boys.
On June 21st my Superman was diagnosed with Stage 3 Renal Carcinoma. We would find out later that the cancer in his kidney is the size of a softball and the vein that goes to his heart is double in size from the cancer and that the cancer has made it to his heart. Superman's heart! The heart that loves no matter what! The doctors gave, what to me sounded grim, prognosis of 50%. When you think of your gas tank being half full it sounds pretty good but when your daddys chance of living is half it sounds like the end of the world.
Since June 21st not a day has went by, a minute, not even a second that I don't think about losing my daddy to cancer. Some people say its gets easier but he is my daddy, my superman and I don't forsee it getting easier. I have watched my daddy go from a healthy middle aged man to a pale fragile man that can barely get around.
Life can deal some pretty mean things to us but this has got to be one of the worse. I question God constantly and watch as some people get off so easy. My heart is broken and this is the first time that my Superman can't save me because he is trying like hell to save himself.
